Get Dirty in the Kitchen

Let’s make some magic happen… in the Kitchen! 

A perfectly cooked, juicy pork chop over creamy mashed potatoes and drizzled with a balsamic reduction. Salty, sweet, sour… a saturation of the taste buds.  Sounds delish!

#1  How to pick your chops

When it comes to pork chops, you have a lot of options.

  • Do you like bone-in chops?  They tend to have more flavor. 

  • How thick do you like your chops? 

  • Do you like your chops bare or dressed?

  • Do you prefer slow & steady or hot & heavy?  You could even start hot and finish it off slow and steady.

The basic techniques are the same but depending on the variations you choose, you may need some slight modifications to keep the chop juicy.

#2  Making the potatoes creamy

  • Sometimes they are dirty so you’ll want to rinse them good before you get started

  • Color and size don’t matter much here.  They all taste the same to me.

  • Do you like them peeled?  If you like skins on, red is better to me but all work

  • Do you want your potatoes silky smooth, chucky or somewhere in between?  

Once you’ve selected your potatoes, you’ll need a few other things.  

 

  • Potato Reserve:  Boiling the potatoes is round 1.  You want to save a little in reserve to hydrate your potatoes when you’re ready to mix it all up.
  • Milk:  I like whole milk.  I’ve never tried almond milk but I hear it can be good.
  • Butter:  How salty do you like it?  You can get salted or unsalted butter… up to you.
  • Garlic:  Spice things up with some roasted garlic.  Warm it up slowly and squeeze the bulb by hand.
  • Salt an Pepa - for the freshest taste, use a grinder and once again, choose the size.  If you like it fine, add anytime.  If you like it course, add early so the salt has time to dissolve and make its way through all of the potatoes. 

Flavor your water:  Don’t boil plain potatoes.  Kick it up a notch by adding some flavor to the water.  Salt, pepper, garlic powder, red pepper flakes… any spices you fancy.  

#3 - A Tangy & Sweet Drizzle

Release about 8 fluid ounces of balsamic into a non-stick pan.  First, get it hot and then lower to just a simmer.  The reduction requires some attention. Stay close and gently whisk it so it doesn’t burn.

  • Onions, Peppers, and Garlic
  • Salt & Pepper
  • Optional Brussels Sprouts, Broccoli or Zucchini
